By popular demand: "Moon's Marvelous Middle-Eastern Cookbook" Garlic Sauce: What you will need: Medium (2 - 4 quart) pot 2 cups fresh garlic cloves 1 tablespoon lemon juice or extract, or half a fresh lemon 1 teaspoon fine ground white pepper cornstarch, or powdered chickpeas (garbanzo beans) food proccessor 1-2 cups of water Whisk, eggbeater, or handmixer Using the food proccessor, chop the garlic cloves to a very fine texture (or chop very finely by hand). Put garlic into saucepot, add just enough water to cover chopped garlic. Boil until soft, when you start to see the bits breaking down. Remove from heat, and use whisk, eggbeater, or handmixer to whip it into a soup-like consistency. At this point, add pepper and lemon juice/extract, or take half lemon, remove peel, and put into food proccessor. Put ingredients into garlic mixture. At this point, you may either simmer garlic mixture down to a thick consistency, or cheat and add a small amount of cornstarch or powdered chickpeas to thicken mixture.thicken mixture. Once you have mixture at desired consistency, (whether cheating or not), remove from all heat, and chill to desired temperature. And voila! You now have homemade Middle Eastern Garlic Sauce! COMING SOON: Middle Eastern Shish-Kabobs
